As promised, here is the recipe to some delicious pumpkin spice peanut butter sandwich cookies with cream cheese frosting! These were a hit at work and at home, plus they are perfect for the holidays.
To make this cookies you will need the seasonal Jif Pumpkin Spice Peanut Butter. I purchased some at Aldi.
This is my favorite peanut butter cookie recipe. The cookies are VERY soft.
1/2 cup margarine, softened
1 cup pumpkin spice peanut butter
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1/2 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cups all-purpose flour
Combine margarine, peanut butter, sugars, egg, and vanilla. Blend together very well.
Add flour, baking soda and salt with mixer.
Chill dough overnight in the refrigerator (I chilled in the freezer until the dough was firm). Roll into balls by hand.
Place on sprayed cookie sheet.
Using a fork, press down the balls and create a criss cross pattern.
Bake in a preheated 350 degrees F (175 degrees C) oven until edges very lightly browning (about 10 minutes).
Cool completely on wire rack and store in airtight container.
Once the cookies have cooled, spread cream cheese frosting in between two cookies. For the frosting, you can purchase cream cheese frosting or make your own with the recipe below:
Ingredients
4 ounces unsalted butter, softened
4 ounces cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract
Directions
In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract.
Now sit back and enjoy your yummy cookies!
